What does "Style 0" actually mean?

Style 0 is the top grade in the global macadamia grading system — the largest whole kernels, with less than 5% broken pieces. It is the grade premium chocolatiers and pastry chefs buy. Lower styles are smaller, more broken, and cheaper. Most "premium" macadamias on a supermarket shelf are not Style 0, and the pack will not tell you.

Why are macadamias so much more expensive than other nuts?

Because the tree makes you wait. A macadamia tree takes seven to ten years to bear a commercial crop, the shell is famously the hardest of any nut to crack, and whole unbroken kernels — the ones you actually want — are only a fraction of the harvest. You are paying for time, and for the ones that survived the cracker intact.

What does "single-origin" mean here, and why should I care?

It means these were grown, harvested and roasted in Australia — one country, start to finish. A great deal of the world's macadamia trade is blended: nuts from several countries pooled together, re-exported through a third country, and sold with no traceable origin. Ours are not. If a pack cannot tell you where the nut grew, there is usually a reason.

Are these salted?

No — these are unsalted, with no oil and no additives at all. The ingredient list is one item long.

How many macadamias should I eat a day?

A standard serve is about 30g — roughly 10 to 12 kernels. Macadamias are the richest nut there is in fat (mostly monounsaturated), so they are satisfying in small amounts. A handful is a snack; the whole bag is a decision.

What do they taste like?

Buttery and creamy rather than sharp — macadamia is the closest a nut gets to dessert without any sugar being involved. Dry roasting deepens that without adding grease, so the finish is clean instead of oily.

Can I bake with them?

Yes — they are a classic in white chocolate cookies and caramel tarts. Remember they are already roasted, so add them late to avoid roasting them twice. They also chop beautifully over salads and fish.

How should I store them?

Airtight, cool and dark. Macadamias are very high in oil, which means they are more prone to going rancid than a leaner nut — in Hong Kong's humidity, the fridge or freezer is genuinely worth it. Each pack contains an oxygen and moisture absorber; leave it in the bag.
